I’m gonna start this off by saying, I am NOT a morning person. I cannot function before I’ve had my coffee and a decent breakfast. I’m definitely not leaving the house without caffeine in my system and a happy stomach.  That makes these ‘Peanut Butter & Jam Oat Crumble Bars’ the perfect grab-and-go breakfast.

You can make a quick batch during the weekend and have breakfast ready for the rest of the week. They also make a pretty yummy dessert, so win-win, right? These PB & J Oat Crumble bars are gluten free, vegan and nutritious while not sacrificing on taste. Because my motto in life is to only eat things that make me happy. And these certainly do!



First of all, they contain some of the most delicious ingredients; peanut butter, strawberry jam and oats. As Joey would put it; “What’s not to like?! peanut butter = GOOD, jam = GOOD, oats = GOOOOD.” If that wasn’t enough, I used my easy homemade strawberry jam to make these. It’s not necessary, of course, but I think it’s worth the extra 25 minutes. The store-bought kind will work just fine, but nothing beats homemade jam. Secondly, these peanut butter & jam oat crumble bars are vegan and full of nutrition. The balance of healthy carbs, fats and protein will keep you full until your next meal. The jam will also satisfy your sweet tooth and makes this a breakfast-dessert combo.

If I haven’t persuaded you yet, I’ll end with this. These oat bars are crunchy, fruity, nutty and sweet and will tick all your check boxes for a breakfast winner. You’ll just have to try them for yourself to find out!

These Peanut Butter & Jam Oat Crumble Bars are the perfect grab-and-go breakfast. They are gluten free, vegan, nutritious and also make a pretty yummy dessert!

Prep Time 10 minutes
Bake Time 20 minutes
Total Time 30 minutes

Ingredients

  • 1/3 cup flavourless oil
  • 1/2 cup peanut butter
  • /4 cup agave or other syrup
  • 1/2 cup light brown sugar
  • 1/3 cup milk of choice
  • 1 tsp vanilla extract
  • 1 tsp salt
  • 2 cups oat flour (you can make your own by blitzing oats in a food processor)
  • 1 1/3 cup rolled oats
  • 200 ml strawberry jam

Instructions

  1. Preheat oven to 180°c.
  2. In a big bowl, stir together the oil, peanut butter, agave, sugar, milk, vanilla and salt. Pour in the oat flour and the rolled oats and mix until completely combined.
  3. Line a square baking dish with parchment paper. Using only around 2/3 of the mixture, flatten it into the dish. Spread the jam in an even and thick layer.
  4. Crumble the rest of the oat mixture into large pieces and scatter onto the jam. Press down slightly. (Optional) Drizzle more jam on top.
  5. Bake for 20-25 minutes. Let cool on a cooling rack. Cut into 9 squares and enjoy!

Notes

Store in a cool dry place for a week or refrigerate for up to 2 weeks.

Pan size = 8" by 8"

Make sure the oats are gluten free if you're Celiac or intolerant!

I am interested doing these oat crumble bars, if I do not have oat flour can I use wholemeal flour?

Hi. Since I haven’t tried them with wholemeal flour, I’m not sure what the results will be. Let me know how they come out if you try them. šŸ™‚
