I turned my Perfectly Fudgy Brownies recipe into a brownie cake, added nutella and frosted it using my Kinder Bueno cream filling...and as you can imagine it was just beyond words! Delicious, fudgy, luxurious, decadent, spectacular – you get the gist. 

This cake is the perfect twist on a traditional birthday cake for someone unconventional or someone who just loves brownies. It also makes for a great treat for yourself just because you deserve it.

The addition of nutella to the brownies added another layer of indulgence. The Kinder Bueno frosting tastes exactly like the Kinder Bueno cream filling and pairs amazingly with the rich brownie flavour.

I believe that the cake to frosting ratio should be fairly equal as you can see in the photos above so I suggest really slathering it on. And can you tell how absolutely fudgy the brownie layers are?

Ingredients

Nutella Brownie Cake

  • 200g 50% dark chocolate
  • 1 tbsp nutella, heaped
  • 170g butter, room temp (3/4 cup)
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 tsp vanilla extract
  • 4 medium eggs, room temp
  • 1/2 tsp salt
  • 1 cup plain flour
  • 1/4 cup cocoa powder
  • 1 tbsp nutella, to swirl
  • 1 tbsp hazelnut cream, to swirl

Assembling

  • Kinder Bueno Frosting (Recipe: https://thesweetbalance.net/recipes/creams/kinder-bueno-filling/)
  • Crushed hazelnuts
  • Chocolate flakes

Instructions

  1. Prepare 2 cake tins of 6" each by lining with overhanging parchment paper (crumple to fit into a circular mold). Coat the tins with butter so the parchment adheres to it. Do not spray or butter the surface of the parchment or the brownies will stick to it.
  2. Preheat oven to 175°c / 350°F. In a heat-proof bowl, melt chocolate in the microwave in 1 minute intervals and stir until smooth. Add the nutella and stir until incorporated. Set aside to cool.
  3. Cream the butter and the sugars with a hand-held whisk. Add the vanilla and eggs and whip until fluffy. Sift the dry ingredients into the mixture and whip or fold just until everything is combined. Stir in the slightly cooled chocolate.
  4. Divide the brownie batter equally into both dishes. Add dollops of nutella and hazelnut cream around the batter and swirl with a skewer or knife to create an appealing design.
  5. Bake for 20-25 minutes in the middle rack. A toothpick inserted into the edges of the brownies should come out with crumbs but not coated in the batter while a toothpick inserted into the centre should have a more fudgy coating.
  6. Transfer from the oven to a cooling rack and let cool completely, at least 45 minutes. Use the parchment overhang to take the layers out of the tins. Refrigerate for at least 2 hours before assembling so the layers are firmer.
  7. To assemble, place the first cake layer on the serving plate. Spread a layer of nutella then use a spatula to add a thick layer of Kinder Bueno frosting leaving around 1" clear from the edges. Very gently slide the 2nd cake layer on top and adjust positioning if needed.
  8. Using a 1M piping tip, pipe around the edges of the top layer cake in circular motions to create a rope braid effect. Sprinkle some crushed hazelnuts and chocolate flakes to finish it. Keep refrigerated until serving.
  9. When serving, cut the slices straight out of the fridge then let them slowly come to room temperature (don't leave it too long or the frosting will melt). Enjoy!
