As someone who doesn’t like lemon or anything that is even remotely sour, I really love this lemon curd. It has the perfect balance of texture and taste – not too sour or too sweet, not too runny or too thick – Just right! Look at that creamy deliciousness, don’t you just want to dig right in?!

Easy Homemade Lemon Curd Recipe

This Easy Lemon Curd Recipe is creamy, zesty, and refreshing. It's also Gluten Free and requires only 6 ingredients and 10 minutes of prep time.

Chill Time 30 minutes
Total Time 40 minutes

Ingredients

  • 2 medium lemons, juice and zest
  • 3 medium egg yolks
  • 2 medium whole eggs
  • 4 tbsp cornflour
  • 1 tsp vanilla extract
  • 1/2 cup gran. sugar
  • 1/2 cup butter, salted

Instructions

  1. Juice and zest the fresh lemons. Mix the zest with the sugar. Set aside.
  2. In a small pot, stir the egg yolks with the whole eggs. Add the lemon sugar mixture and mix until combined.
  3. Sift in the cornflour and whisk well. Transfer the pot to the stove-top on medium heat and whisk continuously until smooth.
  4. Once it starts to thicken, take off the heat and add the cubed butter. Strain into a jar or bowl and cover with plastic wrap in direct contact with the curd so it doesn't form a skin.
  5. Refrigerate at least 30 minutes until completely cool and thickened. Enjoy in trifles, crepes, donuts, tarts, cakes, cupcakes, tarts, pavlovas, scones, and more!

Notes

Storage: Keep refrigerated in an airtight container for up to a week or freeze for up to 3 months.

Ingredients:

  • Butter: You can also opt for unsalted butter and add salt to taste.
  • Lemon Juice: It's important to use freshly squeezed lemon juice in this recipe.
