Chocolate & Candy Cane Slice and Bake Cookies are so pretty and festive on top of being delicious and indulgent. Super crumbly dark chocolate cookie, dipped in sweet white chocolate, and sprinkled with crushed candy canes – Perfection!

The best part about slice and bake cookies is that they’re so easy to make – all you have to is form the dough into a log, then…slice…and bake. Simple, right?

If you’d like to introduce an extra flavour into this cookie, feel free to add a small dash of peppermint extract to the dough.

Chocolate Slice and Bake Cookies

Chocolate & Candy Cane Slice and Bake Cookies are perfect for Christmas - Deliciously crumbly, pretty and festive, and super easy to make!

Cook Time 12 minutes
Total Time 27 minutes

Ingredients

  • 100g butter, melted
  • 100g granulated sugar
  • 1 egg, room temp
  • 1 tsp vanilla extract
  • 1/3 tsp peppermint extract (optional)
  • 180g plain flour
  • 1 tbsp corn flour
  • 20g cocoa powder
  • 100g white chocolate, melted
  • Crushed candy canes

Instructions

  1. Mix the melted butter with the sugar. Add the egg and vanilla and stir well. Sift in the flours and fold until thoroughly combined. Fold in the chopped fruit and nuts (or chocolate/candy as desired)
  2. Form the mixture into a long log, tightly wrapped in plastic wrap. Refrigerate overnight. When ready to bake, preheat the oven at 180°C. In the meantime, double-line a large cookie sheet with two layers of parchment paper.
  3. Slice cookies around 1/4 inch in thickness and set them approx. 1/2 inch apart on the baking sheet. Bake for 12 minutes, then let cool completely.
  4. Dip the ends in melted chocolate, place on parchment paper, and sprinkle with crushed candy canes, then let it set at room temperature. Enjoy!

Notes

Storage: Keep in a cool, dry place in an airtight container. Do not refrigerate.
