Cranberry & Nuts Slice and Bake Cookies are totally on theme for Christmas. The cookie is deliciously crumbly and dipped in dark chocolate for the perfect level of indulgence.
The best part about slice and bake cookies is that they’re so easy to make – all you have to is form the dough into a log, then…slice…and bake. Simple, right?
If you’re not a fan of nuts and dried fruit, you can totally customise this recipe with chocolate chunks or chocolate chips and maybe some candy like chopped m&m’s!

Cranberry & Nuts Slice and Bake Cookies
Cranberry & Nuts Slice and Bake Cookies are perfect for Christmas - Deliciously crumbly, dipped in dark chocolate, and super easy to make!
Ingredients
- 100g butter, melted
- 100g gran. sugar
- 1 egg, room temp
- 1 tsp vanilla extract
- Zest of 1/2 a small orange (optional)
- 200g plain flour
- 1 tbsp corn flour
- 1 cup mixture of chopped dried cranberries, roasted pistachios and almonds
- 100g dark chocolate, melted (to dip)
Instructions
- Mix the melted butter with the sugar. Add the egg, vanilla, and zest and stir well. Sift in the flours and fold until thoroughly combined. Fold in the chopped fruit and nuts (or chocolate/candy as desired)
- Form the mixture into a long log, tightly wrapped in plastic wrap. Refrigerate overnight. When ready to bake, preheat the oven at 180°C. In the meantime, double-line a large cookie sheet with two layers of parchment paper.
- Slice cookies around 1/4 inch in thickness and set them approx. 1/2 inch apart on the baking sheet. Bake for 12 minutes, then let cool completely. Dip the ends in melted chocolate and place on parchment to set at room temperature. Enjoy!

Storage: Keep in a cool, dry place in an airtight container. Do not refrigerate.
