Baileys Irish Cream Chocolate Mousse is deliciously decadent with an incredibly airy texture. Chocolate mousse is one of my favourite desserts, it’s indulgent but still feels very lightweight. It’s perfect if you’ve just had a heavy meal but still craving a treat afterwards. The Baileys Irish Cream takes it to another level of goodness, adding a little kick to it without overwhelming the flavour of the chocolate. If you want an alcohol-free chocolate mousse, you can simply omit the Baileys from the recipe. However, since I came up with this recipe for St. Patrick’s Day, I’m totally spiking mine with some Irish Liquor. Having said that, you don’t need to wait until the 17th of March to enjoy this, and I definitely won’t. 😉



How to make Chocolate Mousse

The recipe is made up of only 8 ingredients. It is also very quick and easy to make and requires no baking. You can whip up a batch of 6 servings in just around 15 minutes. Then, refrigerate for 30 minutes to an hour and you can dig in. However, they are even better if you leave them in the fridge overnight and became a lot more airy and bubbly.

The trick in getting that texture is making a stable Swiss Meringue and then folding it into the rest of the mixture. Take a look at the amazing texture in the photo below. If that’s not the most inviting Baileys Irish Cream Chocolate Mousse, then I don’t know what is.

Baileys Irish Cream Chocolate Mousse

Baileys Irish Cream Chocolate Mousse is deliciously decadent with an incredibly airy texture. Perfect as a lightweight treat or for St. Patrick's Day.

Ingredients

Baileys Chocolate Mousse

  • 200g dark chocolate
  • 200ml whipping cream (1 cup)
  • 200 ml Baileys (1 cup)
  • 1 tsp vanilla extract
  • Pinch of salt
  • 3 large egg yolks
  • 3 large egg whites
  • 3 tbsp caster sugar
  • 1 tsp cream of tartar

Baileys Whipped Cream

  • 200 ml whipping cream, cold
  • 2 tbsp powdered sugar
  • 1 tbsp cold Baileys
  • 1 tsp vanilla extract

Garnish

  • Cocoa powder
  • Chocolate shavings

Instructions

  1. Heat the whipping cream and Baileys, then add the chocolate and stir together until it melts completely. Let it cool slightly. Add the vanilla, salt and egg yolks, and whisk until smooth and combined. Set aside to cool.
  2. On a bain maire, whisk the egg whites with the caster sugar until foamy. Add the cream of tartar and keep whisking until you reach medium peaks. Take off the heat and let cool.
  3. Gently fold a third of the egg whites into the mixture until no whites are visible. Repeat with the rest of the egg whites until everything is combined. Pour the mousse into 6 glasses and chill for at least 30 minutes.
  4. In the meantime, prepare the whipped cream by whisking all 4 ingredients together. Chill for at least 1 hour until it thickens. Top the mousse with some dollops of whipped cream. Ideally, refrigerate again overnight, but you can eat it immediately as well.
  5. Garnish with cocoa powder and chocolate shavings. Enjoy!

Notes

Storage: Keep refrigerated for up to a week.

Note: For an alcohol free chocolate mousse, simply leave out the Baileys.
